Aside from the matter of noodles – Hiroshima often adds them, Osaka almost never does – the main difference between the two styles of okonomiyaki comes down to the method of preparation. In the Kansai region (where Osaka is located), all the ingredients are typically mixed up right from the start and cooked together on the hotplate.
